Grilled Cilantro-Lime Pork Chops

Ingredients

  • 6 (4-oz) boneless center-cut pork loin chops, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp fresh lime juice
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat grill or grill pan coated with cooking spray to medium-high heat. Sprinkle both sides of pork with salt and pepper.
  2. Grill, covered, 4 minutes on each side or until done. Drizzle lime juice over pork chops, and sprinkle with cilantro.

  • 5 cups frozen corn kernels
  • 1½ cups chopped celery
  • 1 cup chopped green bell pepper
  • ¾ cup reduced-fat mayonnaise
  • ⅓ cup reduced-fat sour cream
  • 1 Tbsp sugar
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 6 yellow squash, cut in half lengthwise

Side Dish Instructions

  1. Cook corn according to package directions; drain, rinse with cold water to cool.
  2. Stir together corn, celery, bell pepper, mayonnaise, sour cream, sugar, ½ tsp salt, and black pepper in a bowl.
  3. Heat a grill or grill pan over medium-high heat.
  4. Coat squash with cooking spray; grill 8 minutes or until tender, turning occasionally.
  5. Sprinkle squash with ¼ tsp salt.
