Grilled Cilantro-Lime Pork Chops
Creamy Bell Pepper-Corn Salad and Grilled Yellow SquashIngredients
- 6 (4-oz) boneless center-cut pork loin chops, trimmed
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp fresh lime juice
- ¼ cup chopped fresh cilantro
Instructions
- Preheat grill or grill pan coated with cooking spray to medium-high heat. Sprinkle both sides of pork with salt and pepper.
- Grill, covered, 4 minutes on each side or until done. Drizzle lime juice over pork chops, and sprinkle with cilantro.
Side Dish Ingredients
- 5 cups frozen corn kernels
- 1½ cups chopped celery
- 1 cup chopped green bell pepper
- ¾ cup reduced-fat mayonnaise
- ⅓ cup reduced-fat sour cream
- 1 Tbsp sugar
- ¾ tsp salt
- ¼ tsp black pepper
- 6 yellow squash, cut in half lengthwise
Side Dish Instructions
- Cook corn according to package directions; drain, rinse with cold water to cool.
- Stir together corn, celery, bell pepper, mayonnaise, sour cream, sugar, ½ tsp salt, and black pepper in a bowl.
- Heat a grill or grill pan over medium-high heat.
- Coat squash with cooking spray; grill 8 minutes or until tender, turning occasionally.
- Sprinkle squash with ¼ tsp salt.
