Egg-and-Cheese Bagel Sandwiches

Ingredients

  • 12 slices bacon, cut in half crosswise
  • 12 large eggs
  • 6 Tbsp milk
  • 6 everything bagels, halved and toasted
  • 6 slices Cheddar cheese

Instructions

  1. Cook bacon in a large nonstick skillet until crisp; drain on paper towels, reserving 1 Tbsp drippings in skillet.
  2. Whisk together eggs and milk in a large bowl. Cook egg mixture in hot drippings over medium heat until eggs are just set. Season to taste with salt and pepper.
  3. Divide egg mixture among bottom halves of bagels. Top eggs with bacon and cheese, and cover with bagel tops.

  • 3 apples, sliced
  • 2 bananas, sliced
  • 1 pint blueberries

Side Dish Instructions

  1. Combine all ingredients just before serving.
