Grilled Lemon Chicken
Rice Pilaf and Roasted Vegetables
Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 2 Tbsp Montreal chicken seasoning
- 2 lemons, halved
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken breasts in half crosswise; pound to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Brush chicken with oil, and sprinkle with seasoning.
- Grill chicken, covered, 4 to 5 minutes per side or until done; grill lemons, cut sides down, 2 minutes.
- Serve chicken with grilled lemons.

- 2 (12-oz) pkg broccoli, cauliflower, and carrots
- 2 Tbsp olive oil
- 3 (8.8-oz) pouches microwavable rice pilaf
Side Dish Instructions
- Preheat oven to 425°F. Toss together vegetables and oil on a large rimmed baking sheet; spread in a single layer. Lightly season with salt and pepper. Bake 15 minutes or until vegetables are browned and tender.
- Meanwhile, heat rice according to package directions .
