Cashew Chicken

Cheesy Broccoli Pilaf

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ tsp salt
  • 2 Tbsp olive oil 
  • ¼ cup butter
  • ½ cup roasted, salted cashews (or use almonds, walnuts, or peanuts)

Instructions

  1. Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt.
  2. Cook chicken, in batches if necessary, in hot oil over medium-high heat 4 minutes per side or until done; remove from skillet.
  3. Melt butter in skillet; add nuts, and cook 3 minutes or until nuts are toasted. Serve sauce with chicken.

Side Dish Ingredients

  • ¼ cup chopped onion
  • 2 tsp olive oil
  • 2 (10-oz) pkg frozen riced broccoli 
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp butter
  • ¾ cup shredded Gouda cheese (or use Cheddar)

Side Dish Instructions

  1. Cook onion in hot oil in a large skillet over medium heat 2 to 3 minutes or until tender.
  2. Stir in broccoli, salt, and pepper. Cook 8 to 10 minutes or until tender.
  3. Stir in butter and cheese; reduce heat, and cook 2 minutes until cheese melts.
