Cashew Chicken
Cheesy Broccoli PilafIngredients
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt
- 2 Tbsp olive oil
- ¼ cup butter
- ½ cup roasted, salted cashews (or use almonds, walnuts, or peanuts)
Instructions
- Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt.
- Cook chicken, in batches if necessary, in hot oil over medium-high heat 4 minutes per side or until done; remove from skillet.
- Melt butter in skillet; add nuts, and cook 3 minutes or until nuts are toasted. Serve sauce with chicken.

- ¼ cup chopped onion
- 2 tsp olive oil
- 2 (10-oz) pkg frozen riced broccoli
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp butter
- ¾ cup shredded Gouda cheese (or use Cheddar)
Side Dish Instructions
- Cook onion in hot oil in a large skillet over medium heat 2 to 3 minutes or until tender.
- Stir in broccoli, salt, and pepper. Cook 8 to 10 minutes or until tender.
- Stir in butter and cheese; reduce heat, and cook 2 minutes until cheese melts.
