One-Dish Dinner
Tuscan Chicken and Sausage Pasta
Ingredients
- 1 (16-oz) pkg whole-grain linguine
- 1 (12-oz) pkg Italian chicken sausage links, sliced
- 1 pint grape tomatoes, halved
- 3 cloves garlic, minced
- 2 Tbsp olive oil, divided
- 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
- ¼ cup chicken broth
- 1 (24-oz) jar fire-roasted tomato pasta sauce
- ½ cup heavy cream
- 1 (5-oz) pkg baby kale
- Freshly grated Parmesan cheese (optional)
Instructions
- Cook pasta according to package directions, reserving ⅓ cup pasta water .
- Meanwhile, cook sausage, tomatoes, and garlic in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until tomatoes are blistered. Remove from skillet.
- Cook chicken in 1 Tbsp hot oil in skillet in over medium-high heat 5 to 6 minutes or until browned. Add broth; cook 2 minutes, scraping bottom of skillet with a wooden spoon to loosen browned bits.
- Stir in pasta sauce and cream; bring to a simmer, reduce heat, and cook 2 minutes. Gradually stir in kale until wilted.
- Add sausage mixture to skillet; cook 1 minute. Toss chicken mixture with pasta and reserved ⅓ cup pasta water. If desired, serve sprinkled with cheese.
