Tuscan Chicken and Sausage Pasta

Ingredients

  • 1 (16-oz) pkg whole-grain linguine
  • 1 (12-oz) pkg Italian chicken sausage links, sliced
  • 1 pint grape tomatoes, halved
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil, divided
  • 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ¼ cup chicken broth
  • 1 (24-oz) jar fire-roasted tomato pasta sauce
  • ½ cup heavy cream
  • 1 (5-oz) pkg baby kale
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions, reserving ⅓ cup pasta water .
  2. Meanwhile, cook sausage, tomatoes, and garlic in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until tomatoes are blistered. Remove from skillet.
  3. Cook chicken in 1 Tbsp hot oil in skillet in over medium-high heat 5 to 6 minutes or until browned. Add broth; cook 2 minutes, scraping bottom of skillet with a wooden spoon to loosen browned bits.
  4. Stir in pasta sauce and cream; bring to a simmer, reduce heat, and cook 2 minutes. Gradually stir in kale until wilted.
  5. Add sausage mixture to skillet; cook 1 minute. Toss chicken mixture with pasta and reserved ⅓ cup pasta water. If desired, serve sprinkled with cheese.
