Baked Cod with Broccoli and Tomatoes
Herbed FarroIngredients
- 6 (6-oz) cod fillets
- ¼ cup olive oil, divided
- 2 tsp Italian seasoning
- 1 pint grape tomatoes, halved
- 1 (12-oz) pkg broccoli florets
- 1 Tbsp minced garlic
- 2 tsp lemon zest
- 3 Tbsp lemon juice
- 3 Tbsp chopped fresh basil
- 1 Tbsp honey
Instructions
- Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with Italian seasoning. Season lightly with salt and pepper.
- Toss together tomatoes, broccoli, 3 Tbsp oil, and garlic in a large bowl; season lightly with salt and pepper. Arrange tomato mixture around fish.
- Bake 12 to 18 minutes or until fish flakes with a fork and broccoli is tender. Meanwhile, combine lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.
Side Dish Ingredients
- 1½ cups pearled farro (or use barley)
- 3 Tbsp chopped fresh basil
- 1 Tbsp olive oil vinaigrette
Side Dish Instructions
- Cook farro according to package directions; drain, and toss with remaining ingredients. Season with salt and pepper to taste.
