Baked Cod with Broccoli and Tomatoes

Ingredients

  • 6 (6-oz) cod fillets
  • ¼ cup olive oil, divided
  • 2 tsp Italian seasoning
  • 1 pint grape tomatoes, halved
  • 1 (12-oz) pkg broccoli florets
  • 1 Tbsp minced garlic
  • 2 tsp lemon zest
  • 3 Tbsp lemon juice
  • 3 Tbsp chopped fresh basil
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with Italian seasoning. Season lightly with salt and pepper.
  2. Toss together tomatoes, broccoli, 3 Tbsp oil, and garlic in a large bowl; season lightly with salt and pepper. Arrange tomato mixture around fish.
  3. Bake 12 to 18 minutes or until fish flakes with a fork and broccoli is tender. Meanwhile, combine lemon zest, lemon juice, basil, and honey; drizzle over fish and vegetables.

Side Dish Ingredients

  • 1½ cups pearled farro (or use barley)
  • 3 Tbsp chopped fresh basil
  • 1 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Cook farro according to package directions; drain, and toss with remaining ingredients. Season with salt and pepper to taste.
