Mediterranean Farro and Bean Salad

Ingredients

  • 1½ cups pearled farro (or use barley)
  • 1 (15.5-oz) can chickpeas, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, chopped
  • 1 cup halved pitted kalamata olives
  • ½ cup crumbled feta cheese
  • ½ cup thinly sliced red onion
  • ½ cup chopped fresh basil
  • ⅓ cup olive oil vinaigrette

Instructions

  1. Cook farro according to package directions; drain, and rinse under cold water to cool.
  2. Toss together farro and remaining ingredients in a serving bowl; cover, and chill until ready to serve.
