Mediterranean Farro and Bean Salad

Ingredients
- 1½ cups pearled farro (or use barley)
- 1 (15.5-oz) can chickpeas, drained and rinsed
- 1 pint grape tomatoes, halved
- 1 English cucumber, chopped
- 1 cup halved pitted kalamata olives
- ½ cup crumbled feta cheese
- ½ cup thinly sliced red onion
- ½ cup chopped fresh basil
- ⅓ cup olive oil vinaigrette
Instructions
- Cook farro according to package directions; drain, and rinse under cold water to cool.
- Toss together farro and remaining ingredients in a serving bowl; cover, and chill until ready to serve.
