Italian Pork Chop Dinner

Ingredients
- 6 (1-inch-thick) boneless pork chops
- ⅓ cup olive oil vinaigrette
- 3 cloves garlic, minced
- ½ tsp salt
- 1 tsp pepper
- 1½ lb small red potatoes, quartered
- 1 lb green beans, cut into 1-inch pieces
- 1 pint grape tomatoes
Instructions
- Preheat oven to 400°F. Place pork on a lightly greased large rimmed baking sheet.
- Whisk together vinaigrette, garlic, salt, and pepper in a large bowl. Add potatoes, green beans, and tomatoes; toss. Arrange vegetables around pork. Brush any remaining vinaigrette mixture over pork.
- Bake 25 minutes or until a meat thermometer inserted into thickest portion of pork reads 145°F and vegetables are tender.
