Salmon with Pistachio Gremolata

Lemony Angel Hair Pasta and Asparagus

Ingredients

  • 1 (1½-lb) salmon fillet
  • 2 tsp minced garlic, divided
  • 2 Tbsp olive oil, divided
  • ⅓ cup roasted, salted pistachios, chopped
  • ⅓ cup chopped fresh flat-leaf parsley
  • 2 tsp lemon zest

Instructions

  1. Preheat oven to 450°F. Place salmon on a foil-lined rimmed baking sheet. Combine 1 Tbsp oil and 1 tsp garlic; rub over salmon.
  2. Lightly sprinkle salmon with salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
  3. Meanwhile, combine nuts, parsley, 1 Tbsp oil, lemon zest, 1 tsp garlic, and salt and pepper to taste; drizzle over salmon.

  • 1 (16-oz) pkg whole-grain angel hair pasta
  • ¼ cup lemon juice
  • 2 Tbsp extra virgin olive oil, divided
  • 2 (10-oz) pkg asparagus spears

Side Dish Instructions

  1. Cook pasta according to package directions; toss with lemon juice and 1 Tbsp oil. Season with salt and pepper to taste.
  2. Meanwhile, microwave asparagus according to package directions; toss with 1 Tbsp oil. Season with salt and pepper to taste.
