Salmon with Pistachio Gremolata
Lemony Angel Hair Pasta and Asparagus
Ingredients
- 1 (1½-lb) salmon fillet
- 2 tsp minced garlic, divided
- 2 Tbsp olive oil, divided
- ⅓ cup roasted, salted pistachios, chopped
- ⅓ cup chopped fresh flat-leaf parsley
- 2 tsp lemon zest
Instructions
- Preheat oven to 450°F. Place salmon on a foil-lined rimmed baking sheet. Combine 1 Tbsp oil and 1 tsp garlic; rub over salmon.
- Lightly sprinkle salmon with salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
- Meanwhile, combine nuts, parsley, 1 Tbsp oil, lemon zest, 1 tsp garlic, and salt and pepper to taste; drizzle over salmon.

- 1 (16-oz) pkg whole-grain angel hair pasta
- ¼ cup lemon juice
- 2 Tbsp extra virgin olive oil, divided
- 2 (10-oz) pkg asparagus spears
Side Dish Instructions
- Cook pasta according to package directions; toss with lemon juice and 1 Tbsp oil. Season with salt and pepper to taste.
- Meanwhile, microwave asparagus according to package directions; toss with 1 Tbsp oil. Season with salt and pepper to taste.
