Black Bean Burrito Bowls
Cilantro CremaIngredients
- 1 (8.8-oz) pouches microwavable brown rice
- 2 cups chopped romaine lettuce
- 1 (15-oz) can black beans, drained
- ½ cup shredded Monterey Jack cheese
- 1 small avocado, thinly sliced
- ½ cup fresh salsa
- ½ (3.5-oz) pkg tortilla strips
- 1 green onion, chopped
Instructions
- Cook rice according to package directions. Divide lettuce and rice between 2 serving bowls; top with beans, cheese, avocados, salsa and tortilla strips. Serve sprinkled with onions.
Side Dish Ingredients
- ½ (8-oz) carton sour cream
- 2 Tbsp chopped fresh cilantro
- ¼ tsp ground cumin
- 1 Tbsp lime juice
Side Dish Instructions
- Combine all ingredients in a bowl; season with salt and pepper to taste. Serve with burrito bowls.
