Black Bean Burrito Bowls

Ingredients

  • 1 (8.8-oz) pouches microwavable brown rice
  • 2 cups chopped romaine lettuce
  • 1 (15-oz) can black beans, drained
  • ½ cup shredded Monterey Jack cheese
  • 1 small avocado, thinly sliced
  • ½ cup fresh salsa
  • ½ (3.5-oz) pkg tortilla strips
  • 1 green onion, chopped

Instructions

  1. Cook rice according to package directions. Divide lettuce and rice between 2 serving bowls; top with beans, cheese, avocados, salsa and tortilla strips. Serve sprinkled with onions.

Side Dish Ingredients

  • ½ (8-oz) carton sour cream
  • 2 Tbsp chopped fresh cilantro
  • ¼ tsp ground cumin
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Combine all ingredients in a bowl; season with salt and pepper to taste. Serve with burrito bowls.
