Loaded Potato Tot Kabobs with Sriracha Ranch Dip

Ingredients

  • Loaded Potato Tot Kabobs:
  • 1 (32-oz) pkg frozen potato tots, thawed
  • 12-inch bamboo skewers
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 1 (3-oz) pkg real bacon pieces
  • Sriracha Ranch Dip:
  • 1 cup mayonnaise
  • ⅓ cup buttermilk
  • 1 Tbsp Sriracha hot sauce
  • 1 tsp dried parsley flakes
  • 1 tsp dried dill
  • 1 tsp fresh lemon juice
  • ¼ tsp garlic salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F for tot kabobs; coat a disposable pan or a baking sheet with cooking spray.
  2. Thread 6 to 8 potato tots onto each skewer, and place on prepared pan. Bake 20 minutes or until tots are browned and crisp.
  3. Sprinkle with cheese and bacon. Bake 5 minutes longer or until cheese is melted. Serve with Sriracha Ranch Dip.
  4. For dip, Stir mayonnaise and remaining ingredients in a bowl; refrigerate up to 3 days.
