Baked Pork Chops with Avocado Sauce

Ingredients

  • 6 (6-oz) bone-in center cut pork loin chops
  • 1 tsp garlic salt, divided
  • ½ tsp pepper
  • 2 avocados, cubed
  • 6 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice
  • 1 tsp ground cumin
  • ½ cup water

Instructions

  1. Preheat oven to 375°F. Sprinkle pork with ½ tsp garlic salt and pepper. Place on a lightly greased wire rack on a rimmed baking sheet. Bake 12 to 15 minutes or until done.
  2. Process avocados, oil, lemon juice, ½ tsp garlic salt, cumin, and water in a blender until smooth. Serve pork with avocado sauce.

  • 1 (16-oz) pkg sugar snap peas
  • 3 Tbsp butter, cut into pieces
  • 1 tsp orange zest
  • 1 Tbsp fresh orange juice
  • ½ tsp salt

Side Dish Instructions

  1. Microwave sugar snap peas according to package directions; transfer to a bowl. Stir in remaining ingredients; toss until butter melts.
