Bacon-Wrapped Meatballs

Ingredients

  • 1½ lb ground beef (or use ground turkey)
  • 2 large eggs
  • ⅓ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • ¼ cup almond flour
  • 2 cloves garlic, minced
  • ½ Tbsp onion powder
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 12 slices bacon, halved crosswise

Instructions

  1. Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
  2. Gently mix beef, eggs, cheese, parsley, almond flour, garlic, onion powder, salt, pepper, oregano, and basil in a large bowl. Form into 2½-inch meatballs.
  3. Wrap a piece of bacon around each meatball. Wrap a second piece of bacon around meatballs. Place wrapped meatballs, seam sides down, on baking sheet.
  4. Bake 45 minutes or until no longer pink in center and bacon is crisp. Drain meatballs.

Side Dish Ingredients

  • ⅓ cup sliced almonds
  • 6 cups torn romaine lettuce
  • ½ red onion, thinly sliced
  • ½ cup olive-oil vinaigrette 
  • ⅓ cup blueberries
  • ¼ tsp pepper

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium-low heat until fragrant and golden.
  2. Toss together nuts and all remaining ingredients in a bowl.
