Bacon-Wrapped Meatballs
Romaine with Almonds and Blueberries
Ingredients
- 1½ lb ground beef (or use ground turkey)
- 2 large eggs
- ⅓ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh parsley
- ¼ cup almond flour
- 2 cloves garlic, minced
- ½ Tbsp onion powder
- 1 tsp kosher salt
- 1 tsp pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 12 slices bacon, halved crosswise
Instructions
- Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
- Gently mix beef, eggs, cheese, parsley, almond flour, garlic, onion powder, salt, pepper, oregano, and basil in a large bowl. Form into 2½-inch meatballs.
- Wrap a piece of bacon around each meatball. Wrap a second piece of bacon around meatballs. Place wrapped meatballs, seam sides down, on baking sheet.
- Bake 45 minutes or until no longer pink in center and bacon is crisp. Drain meatballs.
Side Dish Ingredients
- ⅓ cup sliced almonds
- 6 cups torn romaine lettuce
- ½ red onion, thinly sliced
- ½ cup olive-oil vinaigrette
- ⅓ cup blueberries
- ¼ tsp pepper
Side Dish Instructions
- Toast nuts in a dry skillet over medium-low heat until fragrant and golden.
- Toss together nuts and all remaining ingredients in a bowl.
