Cheesy Ranch Chicken

Ingredients
- 1½ cups shredded Cheddar cheese
- ⅓ cup mayonnaise
- 1 Tbsp Ranch dressing mix
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch strips
- 2 Tbsp olive oil
Instructions
- Combine cheese, mayonnaise, and Ranch mix in a bowl.
- Cook chicken, in two batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 6 minutes. Return all chicken to skillet, and top with cheese mixture. Cook 6 minutes until chicken is done and cheese is melted.
Side Dish Ingredients
- 1 (16-oz) pkg frozen whole green beans
- 1 tsp salt
- ¼ cup slivered almonds
- 2 Tbsp butter
- 1 Tbsp lemon juice
Side Dish Instructions
- Cook green beans according to package directions; place in a bowl. Sprinkle with salt.
- Cook nuts in melted butter in a small skillet over medium heat until toasted.
- Stir in lemon juice; spoon over green beans.
