Cheeseburger Pie

Lemon-Parmesan Zucchini

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ½ tsp kosher salt, divided
  • ½ cup almond flour
  • ¾ tsp baking powder
  • 2 Tbsp butter
  • ½ cup heavy cream
  • 1 egg, lightly beaten
  • 1 cup chopped tomato
  • 1 cup shredded Swiss cheese

Instructions

  1. Preheat oven to 400°F. Cook beef, onion, and garlic in a skillet over medium heat, stirring, 6 minutes or until beef is browned and crumbly. Season with ¼ tsp salt. Spread on bottom of a 9-inch pie plate.
  2. Combine flour, baking powder, and ¼ tsp salt in a small bowl; cut in butter. Stir in cream and egg. Pour over beef mixture.
  3. Bake 25 minutes. Top with tomato and cheese.
  4. Bake 5 to 8 minutes longer or until cheese melts and knife inserted in center comes out clean.

  • 2 lb zucchini
  • 2 Tbsp olive oil
  • 1 tsp lemon zest
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp kosher salt

Side Dish Instructions

  1. Cut zucchini in half crosswise; cut each half into 4 lengthwise pieces. Heat oil in a large nonstick skillet over medium-high heat.
  2. Sauté zucchini and lemon zest 3 minutes until zucchini is lightly browned, stirring often. Stir in cheese and salt.
