Grilled Chicken Salad with Avocado and Almonds

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 5 Tbsp olive oil, divided
  • 1 tsp kosher salt, divided
  • ½ cup chopped almonds
  • ¼ cup lime juice
  • ½ tsp garlic powder
  • 2 (5-oz) pkg mixed salad greens
  • 1 avocado, diced

Instructions

  1. Place chicken in a small dish; drizzle with 1 Tbsp oil, and sprinkle with ¾ tsp salt.
  2. Preheat grill or grill pan to medium-high heat. Add chicken, and grill 5 to 7 minutes per side or until done. Cool; chop chicken.
  3. Meanwhile, toast nuts in a dry skillet over medium-high heat 4 to 5 minutes or until golden and fragrant.
  4. Whisk together lime juice, 4 Tbsp oil, ¼ tsp salt, and garlic powder.
  5. Toss together greens, chicken, avocado, and nuts. Drizzle with dressing. Toss.
