Caesar Chicken

Green Bean and Tomato Salad

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ¾ cup creamy Caesar dressing
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Place chicken in a greased baking dish; drizzle with dressing.
  2. Bake 15 minutes. Sprinkle with cheese, and bake 5 minutes longer or until chicken is done and cheese melts.

Side Dish Ingredients

  • 1 lb green beans, trimmed
  • ¼ cup finely chopped basil
  • 2 Tbsp minced shallots
  • 2 Tbsp  lemon juice
  • 2 Tbsp olive oil
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Cook green beans in boiling water 2 minutes or until crisp-tender; drain. Rinse with cold water; drain again.
  2. Combine basil, shallots, lemon juice, and oil. Add green beans and tomatoes.
