Steak Burrito Bowls

Ingredients

  • 1½ lb skirt steak (or use flank steak)
  • 4 Tbsp olive oil, divided
  • 1 tsp salt, divided
  • ½ tsp pepper
  • 2 (12-oz) pkg frozen cauliflower rice
  • 2 Tbsp lime juice
  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 cup fresh salsa
  • 2 avocados, sliced
  • ¾ cup crumbled feta cheese

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub steak with 2 Tbsp oil; sprinkle with ½ tsp each salt and pepper.
  2. Grill steak, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, cook cauliflower rice according to package directions. Stir in ½ tsp salt.
  4. Divide lettuce and cauliflower rice among 6 bowls. Whisk together 2 Tbsp oil and lime juice. Drizzle over each bowl.
  5. Top with steak, salsa, avocado, and cheese.
