Sloppy Joe Mac and Cheese

Mini Corn and Apples 'n Grapes

Ingredients

  • 1 lb ground beef (or use ground turkey)
  • 1 small green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 (14.5-oz) can petite-diced tomatoes
  • 1 (8-oz) can tomato sauce
  • 2 cups milk
  • 1 cup beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 1 (7-oz) pkg elbow macaroni
  • 1 (8-oz) pkg shredded Monterey Jack cheese

Instructions

  1. Cook beef, bell pepper, and garlic in a large, deep skillet over medium-high heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in tomatoes, tomato sauce, milk, broth, Worcestershire, and mustard. Bring to a boil. Stir in uncooked macaroni; reduce heat, and simmer, covered, 12 to 15 minutes or until pasta is tender.
  3. Stir in 1½ cups cheese until melted. Sprinkle with ½ cup cheese; let stand until melted.

Side Dish Ingredients

  • 1 (12-count) pkg frozen mini ears corn
  • 2 Tbsp butter
  • 2 large apples, chopped
  • 2 cups seedless grapes

Side Dish Instructions

  1. Cook desired amount of corn according to package directions. Rub with butter; season with salt and pepper to taste.
  2. Toss apples and grapes in a bowl; chill until ready to serve.
