Bang Bang Chicken
Buttery Broccoli and Rice
Ingredients
- ¾ lb boneless, skinless chicken breasts, cut into chunks
- ¼ cup cornstarch
- 1 large egg
- ½ cup buttermilk
- ¾ cup panko breadcrumbs
- ¼ cup mayonnaise
- 1½ Tbsp sweet chili sauce
- ½ Tbsp honey
Instructions
- Preheat oven to 450°F; place a greased rimmed baking sheet in the oven while it preheats. Season chicken lightly with salt.
- Place cornstarch in a shallow dish; whisk together egg and buttermilk in a separate shallow dish. Place panko in a third shallow dish.
- Dredge chicken in cornstarch, then in egg mixture, and finally in panko.
- Place chicken on preheated baking sheet; spray chicken with cooking spray. Bake 15 minutes or until browned and crisp.
- Stir together mayonnaise, chili sauce, and honey; drizzle sauce over chicken.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- 1½ Tbsp butter, divided
- 1 (8.8-oz) pouch microwavable long-grain white rice
Side Dish Instructions
- Cook broccoli according to package directions. Toss with ½ Tbsp butter in a bowl. Season with salt to taste.
- Cook rice according to package directions; toss with 1 Tbsp butter.
