Beefy Hash Brown Casserole
Garlic Broccoli
Ingredients
- ½ (26-oz) pkg frozen shredded hash browns, thawed
- ¾ lb ground beef (or use ground turkey)
- 1 (12-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
- 1½ cups shredded mozzarella cheese, divided
- ½ (24-oz) jar pasta sauce
Instructions
- Preheat oven to 350°F. Spread half of potatoes on bottom of a lightly greased 9-inch baking dish; season lightly with salt and pepper. Bake 15 minutes.
- Cook beef and seasoning blend in a large skillet over medium heat until beef is browned and crumbly; drain well.
- Spoon over potatoes; top with ¾ cup cheese and remaining potatoes. Season potatoes lightly with salt and pepper.
- Spread pasta sauce over casserole. Cover and bake 15 minutes; uncover, sprinkle with ¾ cup cheese, and bake 10 minutes longer.
Side Dish Ingredients
- 1 Tbsp butter
- 2 cloves garlic, minced
- ¾ lb broccoli, cut into small florets
Side Dish Instructions
- Melt butter in a large skillet over medium-high heat. Add garlic, and sauté 1 minute.
- Add broccoli; cook 6 to 8 minutes or until tender. Season with salt and pepper to taste.
