Slow-Cooked Sweet and Sour Brisket

Ingredients
- 3½ lb beef brisket, trimmed
- 1 tsp salt
- 1 tsp freshly ground pepper
- 2 sweet onions, sliced
- 1 (15-oz) can tomato sauce
- 2 Tbsp unsulphured molasses
- 1 Tbsp balsamic vinegar
Instructions
- Sprinkle brisket with salt and pepper. Place onions in a 5-quart slow cooker; place brisket over onions.
- Whisk together tomato sauce, molasses, and vinegar; pour over brisket. Cover and cook on LOW 8 hours or until brisket is tender.
- Slice brisket before serving; reserve 3 cups brisket for Sliced Beef Sandwiches recipe. Serve remaining brisket.
Side Dish Ingredients
- 4 large organic sweet potatoes
- 2 Tbsp butter
- 1 tsp salt, divided
- 1 tsp freshly ground pepper, divided
- 2 (12-oz) pkg green beans
Side Dish Instructions
- Preheat oven to 425°F. Prick and bake potatoes 30 minutes or until tender; peel potatoes, and mash in a bowl. Stir in butter and ½ tsp each salt and pepper.
- Meanwhile, microwave green beans according to package directions; sprinkle with ½ tsp each salt and pepper.
