Slow-Cooked Sweet and Sour Brisket

Ingredients

  • 3½ lb beef brisket, trimmed
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 2 sweet onions, sliced
  • 1 (15-oz) can tomato sauce
  • 2 Tbsp unsulphured molasses
  • 1 Tbsp balsamic vinegar

Instructions

  1. Sprinkle brisket with salt and pepper. Place onions in a 5-quart slow cooker; place brisket over onions.
  2. Whisk together tomato sauce, molasses, and vinegar; pour over brisket. Cover and cook on LOW 8 hours or until brisket is tender.
  3. Slice brisket before serving; reserve 3 cups brisket for Sliced Beef Sandwiches recipe. Serve remaining brisket.

Side Dish Ingredients

  • 4 large organic sweet potatoes
  • 2 Tbsp butter
  • 1 tsp salt, divided
  • 1 tsp freshly ground pepper, divided
  • 2 (12-oz) pkg green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Prick and bake potatoes 30 minutes or until tender; peel potatoes, and mash in a bowl. Stir in butter and ½ tsp each salt and pepper.
  2. Meanwhile, microwave green beans according to package directions; sprinkle with ½ tsp each salt and pepper.
