Honey-Garlic Pork Tenderloin
Pistachio-Cherry Salad
Ingredients
- 2 Tbsp honey
- 2 Tbsp white wine vinegar
- 2 pork tenderloins (2 lb), trimmed
- ¾ tsp salt
- ¾ tsp freshly ground pepper
- 4 cloves garlic, minced
- ¼ cup honey
- 3 Tbsp low-sodium soy sauce
- 1 Tbsp Dijon mustard
- 1 Tbsp olive oil
Instructions
- Preheat grill to medium-high heat. Combine honey and vinegar; brush on pork. Sprinkle pork with salt and pepper.
- Grill, covered, 20 to 25 minutes or until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
- Combine garlic, honey, soy sauce, mustard, and oil in a small bowl. Drizzle over pork.
Side Dish Ingredients
- 8 cups spring mix
- ¾ cup crumbled goat cheese
- ½ cup pistachios
- ½ cup dried cherries (or use dried cranberries)
- ⅓ cup olive oil and vinegar dressing
Side Dish Instructions
- Toss together all ingredients in a bowl.
