Honey-Garlic Pork Tenderloin

Ingredients

  • 2 Tbsp honey
  • 2 Tbsp white wine vinegar
  • 2 pork tenderloins (2 lb), trimmed
  • ¾ tsp salt
  • ¾ tsp freshly ground pepper
  • 4 cloves garlic, minced
  • ¼ cup honey
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp Dijon mustard
  • 1 Tbsp olive oil

Instructions

  1. Preheat grill to medium-high heat. Combine honey and vinegar; brush on pork. Sprinkle pork with salt and pepper.
  2. Grill, covered, 20 to 25 minutes or until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
  3. Combine garlic, honey, soy sauce, mustard, and oil in a small bowl. Drizzle over pork.

Side Dish Ingredients

  • 8 cups spring mix
  • ¾ cup crumbled goat cheese
  • ½ cup pistachios
  • ½ cup dried cherries (or use dried cranberries)
  • ⅓ cup olive oil and vinegar dressing

  1. Toss together all ingredients in a bowl.
