Beef-Horseradish Sauce Sandwiches
Summer Tomato SaladIngredients
- 3 cups reserved brisket and sauce, reheated (from Slow-Cooked Brisket recipe)
- 6 hamburger buns (preferably whole wheat)
- ½ cup sour cream
- 2 Tbsp prepared horseradish
- 2 cups baby arugula
Instructions
- Place heated brisket on bottom buns.
- Stir together sour cream and horseradish; spoon over brisket. Add arugula, and cover with bun tops.
Side Dish Ingredients
- 4 organic heirloom tomatoes, cut into wedges
- 1 zucchini, halved and sliced
- ½ cup sliced red onion
- 3 Tbsp chopped fresh basil
- 3 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 1 tsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Combine tomatoes, zucchini, onion, and basil in a bowl.
- Whisk together oil, vinegar, mustard, salt, and pepper; pour over tomato salad, and toss.
