Pork Tenderloin Lettuce Wraps

Ingredients

  • ¼ cup lime juice
  • 3 Tbsp honey
  • 3 Tbsp dark sesame oil
  • 1 lb pork tenderloin, trimmed
  • 2 heads Bibb or butter lettuce, leaves separated

Instructions

  1. Preheat oven to 425. Whisk together lime juice, honey, and oil. Divide into 2 portions. Brush one portion over pork in a large greased ovenproof skillet; reserve remaining portion.
  2. Cook pork over medium-high heat 5 minutes per side or until browned. Transfer skillet to oven, and bake 10 minutes. Let stand 10 minutes; thinly slice.
  3. Divide pork and Carrot Slaw recipe among lettuce leaves. Drizzle with remaining sauce; roll up.

Side Dish Ingredients

  • 6 large carrots, shredded
  • ¼ cup olive oil
  • ¼ cup rice vinegar
  • 1 Tbsp honey
  • ¼ cup chopped fresh cilantro (or use mint)

Side Dish Instructions

  1. Combine all ingredients in a bowl; chill until ready to serve.
