Pork Tenderloin Lettuce Wraps
Carrot SlawIngredients
- ¼ cup lime juice
- 3 Tbsp honey
- 3 Tbsp dark sesame oil
- 1 lb pork tenderloin, trimmed
- 2 heads Bibb or butter lettuce, leaves separated
Instructions
- Preheat oven to 425. Whisk together lime juice, honey, and oil. Divide into 2 portions. Brush one portion over pork in a large greased ovenproof skillet; reserve remaining portion.
- Cook pork over medium-high heat 5 minutes per side or until browned. Transfer skillet to oven, and bake 10 minutes. Let stand 10 minutes; thinly slice.
- Divide pork and Carrot Slaw recipe among lettuce leaves. Drizzle with remaining sauce; roll up.
Side Dish Ingredients
- 6 large carrots, shredded
- ¼ cup olive oil
- ¼ cup rice vinegar
- 1 Tbsp honey
- ¼ cup chopped fresh cilantro (or use mint)

- Combine all ingredients in a bowl; chill until ready to serve.
