Shrimp and Sausage Creole
Roasted Okra
Ingredients
- 1½ cups long-grain brown rice
- 1 (12-oz) pkg natural, uncured turkey or chicken sausage links, halved lengthwise and sliced
- 1 onion, chopped
- 1 organic green bell pepper, diced
- 2 Tbsp olive oil
- 1 (14.5-oz) can no-salt-added diced tomatoes, undrained
- 3 cloves garlic, minced
- 1 tsp salt-free Cajun seasoning
- 1 lb peeled and deveined, wild-caught raw shrimp, thawed
Instructions
- Cook rice according to package directions.
- Sauté sausage, onion, and bell pepper in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender.
- Add tomatoes, garlic, and Cajun seasoning. Bring to boil; reduce heat, and simmer, uncovered, 5 minutes. Stir in shrimp. Cook 5 minutes or until shrimp turn pink. Serve over rice.
Side Dish Ingredients
- 1½ lb okra, trimmed
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss okra with oil, salt, and pepper; arrange in a single layer on a greased rimmed baking sheet. Bake 15 minutes or until browned.
