Smoky Chicken Fajitas

Ingredients
- 1 (14.5-oz) can no-salt-added diced tomatoes
- 3 lb bone-in chicken breasts
- 1 Tbsp ground cumin
- 1 Tbsp chili powder
- ½ tsp pepper
- 2 organic green bell peppers, thinly sliced
- 1 onion, thinly sliced
- ¼ cup low-sodium chicken broth
- 1 Tbsp lime juice
- 12 fajita-size whole wheat flour tortillas
Instructions
- Pour tomatoes into a greased 5- or 6-quart slow cooker.
- Remove skin from chicken. Sprinkle chicken with cumin, chili powder, and pepper; arrange chicken over tomatoes in cooker. Top with bell peppers, onion, broth, and lime juice.
- Cover and cook on LOW 5 to 6 hours or until chicken is done. Shred chicken with 2 forks, discarding bones.
- Divide chicken, peppers, and onion among tortillas.

- 2 organic tomatoes, chopped
- 2 avocados, diced
- 3 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- 2 Tbsp olive oil
- 1½ Tbsp fresh lime juice
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Combine all ingredients in a bowl. Let stand 5 minutes before serving.
