Ingredients

  • 1 (14.5-oz) can no-salt-added diced tomatoes
  • 3 lb bone-in chicken breasts
  • 1 Tbsp ground cumin
  • 1 Tbsp chili powder
  • ½ tsp pepper
  • 2 organic green bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp lime juice
  • 12 fajita-size whole wheat flour tortillas

Instructions

  1. Pour tomatoes into a greased 5- or 6-quart slow cooker.
  2. Remove skin from chicken. Sprinkle chicken with cumin, chili powder, and pepper; arrange chicken over tomatoes in cooker. Top with bell peppers, onion, broth, and lime juice.
  3. Cover and cook on LOW 5 to 6 hours or until chicken is done. Shred chicken with 2 forks, discarding bones.
  4. Divide chicken, peppers, and onion among tortillas.

  • 2 organic tomatoes, chopped
  • 2 avocados, diced
  • 3 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • 2 Tbsp olive oil
  • 1½ Tbsp fresh lime juice
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine all ingredients in a bowl. Let stand 5 minutes before serving.
