Grilled Bacon-and-Blue Burgers

Ingredients

  • 2 lb lean ground beef
  • ½ cup crumbled blue cheese
  • ½ tsp salt
  • ½ tsp pepper
  • 2 red onions, cut into ¼-inch-thick slices
  • 2 Tbsp olive oil
  • 3 Tbsp Dijon mustard
  • 3 Tbsp organic olive-oil mayonnaise
  • 6 hamburger buns (preferably whole wheat)
  • 6 slices center-cut bacon, cooked and broken in half
  • 3 cups baby arugula

Instructions

  1. Preheat grill to medium-high heat. Gently combine beef, cheese, salt, and pepper; shape into 6 patties. Brush onions with oil.
  2. Grill burgers, covered, 4 to 5 minutes per side or until centers are no longer pink. Grill onions 2 minutes per side.
  3. Stir together mustard and mayonnaise. Spread 1 Tbsp mustard-mayonnaise onto each bun. Serve burgers on buns with bacon, onions, and arugula.

Side Dish Ingredients

  • 1 (15.5-oz) can no-salt-added cannellini beans, drained and rinsed
  • 3 organic heirloom tomatoes (assorted colors), cut into wedges
  • 1 shallot, minced
  • ¼ cup chopped fresh basil
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • ½ tsp kosher salt

Side Dish Instructions

  1. Toss together all ingredients in a large bowl. Chill until ready to serve.
