Sheet Pan Pork Chops with Asparagus and Sweet Potatoes

Ingredients

  • 6 boneless pork chops
  • 6 Tbsp avocado oil, divided
  • 3 Tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 4 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 lb sweet potatoes, peeled and cut into chunks
  • 1 lb asparagus, trimmed

Instructions

  1. Preheat oven to 475°F. Sprinkle pork lightly with salt and pepper. Combine 3 Tbsp oil, lemon juice, garlic, paprika, and thyme. Coat pork with garlic mixture .
  2. Combine 3 Tbsp oil, potatoes, and asparagus; sprinkle vegetables lightly with salt and pepper. Place pork on a large rimmed baking sheet; arrange vegetables around pork.
  3. Bake 25 minutes or until pork is done and vegetables are tender, turning pork and stirring vegetables once halfway through baking.
