Sheet Pan Pork Chops with Asparagus and Sweet Potatoes
Ingredients
- 6 boneless pork chops
- 6 Tbsp avocado oil, divided
- 3 Tbsp fresh lemon juice
- 4 cloves garlic, minced
- 4 tsp smoked paprika
- 1 tsp dried thyme
- 2 lb sweet potatoes, peeled and cut into chunks
- 1 lb asparagus, trimmed
Instructions
- Preheat oven to 475°F. Sprinkle pork lightly with salt and pepper. Combine 3 Tbsp oil, lemon juice, garlic, paprika, and thyme. Coat pork with garlic mixture .
- Combine 3 Tbsp oil, potatoes, and asparagus; sprinkle vegetables lightly with salt and pepper. Place pork on a large rimmed baking sheet; arrange vegetables around pork.
- Bake 25 minutes or until pork is done and vegetables are tender, turning pork and stirring vegetables once halfway through baking.
