Balsamic London Broil
Thyme-Sweet Potato "Noodles"Ingredients
- 2 sweet onions, thinly sliced
- 2 lb London broil
- ¼ cup balsamic vinegar
- 2 Tbsp coconut aminos
- 2 Tbsp whole-grain mustard
- 4 cloves garlic, minced
- 2 tsp pepper
- 3 sprigs fresh rosemary
Instructions
- Place onions in a 5- or 6-quart slow cooker. Top with beef, vinegar, coconut aminos, mustard, garlic, pepper, and rosemary.
- Cover and cook on LOW 8 hours or until beef is very tender. Cool slightly; slice or shred beef.
Side Dish Ingredients
- 4 sweet potatoes
- 2 Tbsp ghee
- 1 Tbsp chopped fresh thyme
Side Dish Instructions
- Cut potatoes into noodles using a spiralizer, or use a vegetable peeler to shave potatoes into long thin ribbons.
- Melt ghee in a large nonstick skillet; add potatoes, in batches, and cook 4 to 5 minutes per batch or until tender. Sprinkle with thyme, and season with salt and pepper to taste.
