Grilled Chicken with White Barbecue Sauce

Ingredients

  • 1½ lb bone-in chicken breasts
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • ⅓ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 2 Tbsp white vinegar
  • 1 Tbsp fresh lemon juice
  • ¼ tsp cayenne pepper

Instructions

  1. Preheat grill to medium-high heat. Remove skin from chicken. Rub chicken with paprika, salt, and black pepper.
  2. Grill, covered, on a greased grill grate 7 to 8 minutes per side or until chicken is done. Cut chicken into serving-size pieces.
  3. Meanwhile, combine mayonnaise, vinegar, lemon juice, and cayenne pepper; serve with chicken.

Side Dish Ingredients

  • 4 large sweet potatoes
  • 2 Tbsp avocado oil
  • 1 tsp garlic salt
  • ½ tsp pepper
  • ½ tsp lemon zest

Side Dish Instructions

  1. Preheat grill to medium-high heat. Microwave potatoes at HIGH 6 to 8 minutes or until crisp-tender. Transfer to a cutting board, and let stand until cool enough to handle, about 15 minutes.
  2. Cut potatoes lengthwise into 16 wedges. Transfer to a rimmed baking sheet; drizzle with oil. Sprinkle with garlic salt, pepper, and lemon zest. Toss.
  3. Grill, covered, 3 minutes per side or until potatoes are charred and tender.
