Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 1 Tbsp minced fresh thyme

Instructions

  1. Cut chicken into small chunks; place in a large zip-top plastic bag. Add oil, vinegar, garlic, and thyme. Seal bag, and turn to coat chicken several times. Let stand 15 minutes.
  2. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade, discarding marinade. Thread chicken onto metal or bamboo skewers; season lightly with salt and pepper.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done. Remove chicken from skewers before serving.

Side Dish Ingredients

  • 6 frozen ears sweet mini corn on the cob
  • 1 Tbsp butter

Side Dish Instructions

  1. Grill corn 5 to 10 minutes or until tender. Rub with butter while hot. Cut corn off the cob, if desired.
