Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 3 cloves garlic, minced
- 1 Tbsp minced fresh thyme
Instructions
- Cut chicken into small chunks; place in a large zip-top plastic bag. Add oil, vinegar, garlic, and thyme. Seal bag, and turn to coat chicken several times. Let stand 15 minutes.
- Preheat grill or grill pan to medium-high heat. Remove chicken from marinade, discarding marinade. Thread chicken onto metal or bamboo skewers; season lightly with salt and pepper.
- Grill chicken, covered, 5 to 6 minutes per side or until done. Remove chicken from skewers before serving.

- 6 frozen ears sweet mini corn on the cob
- 1 Tbsp butter
Side Dish Instructions
- Grill corn 5 to 10 minutes or until tender. Rub with butter while hot. Cut corn off the cob, if desired.
