Cumin-Paprika Pork Tenderloin
Warm Kale and Apple Salad
Ingredients
- 2 pork tenderloins (2 lb)
- 2 Tbsp Montreal steak seasoning
- 1 tsp ground cumin
- ½ tsp smoked paprika (or use regular)
- 2 Tbsp olive oil
Instructions
- Preheat oven to 425°F. Rub pork with Montreal seasoning, cumin, and paprika.
- Brown pork in hot oil on all sides in a large cast-iron or an ovenproof skillet over medium-high heat 5 minutes.
- Transfer skillet to oven. Bake 15 minutes or until pork is done; let rest 5 minutes before slicing.
Side Dish Ingredients
- 3 Honeycrisp apples, sliced
- 1 small onion, sliced
- 1 Tbsp olive oil
- 1 (12-oz) pkg chopped kale
- 2 Tbsp apple cider vinegar
- 1 Tbsp butter
- ¼ tsp salt
- ½ cup crumbled feta cheese (or use goat cheese)
- ½ cup chopped walnuts
Side Dish Instructions
- Cook apples and onion in hot oil in a large Dutch oven over medium-high heat 5 minutes or until tender.
- Stir in kale, vinegar, butter, and salt. Cook 2 to 3 minutes or until kale is tender and deep green in color. Divide among 6 plates. Sprinkle with cheese and nuts.
