Honey-Soy Chicken

Asparagus-Shiitake Mushroom Stir-Fry

Ingredients

  • ⅓ cup honey mustard dressing
  • ⅓ cup teriyaki sauce
  • ¼ to ⅓ cup hot sauce
  • 6 (6-oz) boneless, skinless chicken breasts
  • 1 Tbsp olive oil

Instructions

  1. Combine honey mustard, teriyaki, and hot sauce in a saucepan, and cook over medium-high heat 6 minutes or until thickened.
  2. Meanwhile, cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until browned. Stir in honey mustard mixture, turning to coat chicken. Cook 3 minutes or until chicken is done.

Side Dish Ingredients

  • 2 lb asparagus, trimmed 
  • 1 (5-oz) pkg sliced shiitake mushrooms (or use button mushrooms) 
  • 2 Tbsp dark sesame oil
  • 1 clove garlic, minced
  • ½ tsp kosher salt
  • ½ tsp crushed red pepper

Side Dish Instructions

  1. Sauté asparagus and mushrooms in hot oil a large nonstick skillet over high heat 4 minutes or until crisp-tender. Stir in garlic, salt, and pepper; cook 1 minute.
