Mediterranean Shrimp Pasta Salad
Ingredients
- ½ (16-oz) pkg bow-tie pasta
- ½ lb peeled and deveined, wild-caught raw shrimp
- ½ tsp garlic salt
- ½ (5-oz) pkg baby spinach
- ½ English cucumber, chopped
- 1 Roma tomato, chopped
- ⅓ cup crumbled feta cheese
- 2 green onions, sliced
- ⅓ cup olive oil vinaigrette
Instructions
- Cook pasta according to package directions, adding shrimp during last 3 minutes of cooking; drain, and toss with garlic salt.
- Toss together pasta mixture, spinach, and remaining ingredients in a serving bowl; season with salt and pepper to taste.
