Mediterranean Shrimp Pasta Salad

Ingredients

  • ½ (16-oz) pkg bow-tie pasta
  • ½ lb peeled and deveined, wild-caught raw shrimp
  • ½ tsp garlic salt
  • ½ (5-oz) pkg baby spinach
  • ½ English cucumber, chopped
  • 1 Roma tomato, chopped
  • ⅓ cup crumbled feta cheese
  • 2 green onions, sliced
  • ⅓ cup olive oil vinaigrette

Instructions

  1. Cook pasta according to package directions, adding shrimp during last 3 minutes of cooking; drain, and toss with garlic salt.
  2. Toss together pasta mixture, spinach, and remaining ingredients in a serving bowl; season with salt and pepper to taste.
