Chili-Lime Grouper

Ingredients

  • 6 (6-oz) grouper fillets (or use tilapia, mahi mahi, or other white fish)
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp olive oil
  • 3 Tbsp lime juice
  • 2 tsp crushed red pepper
  • ½ tsp salt
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 425°F. Place fish on a greased rimmed baking sheet.
  2. Whisk together cilantro, oil, lime juice, red pepper, salt, and garlic; drizzle over fish. Bake 15 to 20 minutes or until fish flakes with a fork.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup fresh salsa
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp lime juice

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, heat beans in a saucepan over medium heat 5 minutes or until thoroughly heated. Remove from heat. Stir in rice, salsa, cilantro, and lime juice.
