Chili-Lime Grouper
Salsa Black Beans and Rice
Ingredients
- 6 (6-oz) grouper fillets (or use tilapia, mahi mahi, or other white fish)
- ¼ cup chopped fresh cilantro
- 3 Tbsp olive oil
- 3 Tbsp lime juice
- 2 tsp crushed red pepper
- ½ tsp salt
- 2 cloves garlic, minced
Instructions
- Preheat oven to 425°F. Place fish on a greased rimmed baking sheet.
- Whisk together cilantro, oil, lime juice, red pepper, salt, and garlic; drizzle over fish. Bake 15 to 20 minutes or until fish flakes with a fork.

- 3 (3.5-oz) pouches boil-in-bag brown rice
- 1 (15-oz) can black beans, drained and rinsed
- 1 cup fresh salsa
- ¼ cup chopped fresh cilantro
- 2 Tbsp lime juice
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, heat beans in a saucepan over medium heat 5 minutes or until thoroughly heated. Remove from heat. Stir in rice, salsa, cilantro, and lime juice.
