Grilled Mojo Chicken Breasts

Steamed Broccoli and Quick-Baked Sweet Potatoes

Ingredients

  • 3 Tbsp orange zest
  • 1 cup orange juice
  • 3 Tbsp chopped chipotle peppers in adobo sauce
  • 8 cloves garlic, minced
  • 3 Tbsp chopped fresh thyme
  • ½ tsp salt
  • 2½ lb bone-in chicken breasts, skin removed (see Note)

Instructions

  1. Whisk together orange zest, orange juice, chipotle peppers, garlic, thyme, and salt. Combine half of orange juice mixture and chicken in a large zip-top bag. Seal and chill 30 minutes to 2 hours.
  2. Preheat grill to medium-high heat. Remove chicken from marinade, discarding marinade.
  3. Grill chicken on a grill rack coated with cooking spray 20 to 25 minutes or until chicken is done, turning and basting occasionally with remaining orange juice mixture. Let stand 10 minutes before serving.

Side Dish Ingredients

  • 3 (12-oz) pkg broccoli florets (or use frozen)
  • ¼ tsp salt
  • ½ tsp pepper
  • 6 small microwavable sweet potatoes
  • 3 Tbsp butter

Side Dish Instructions

  1. Cook broccoli according to package directions; toss with salt and pepper.
  2. Microwave potatoes according to package directions; split potatoes, and fluff with a fork. Top with butter.
