Grilled Mojo Chicken Breasts

Grilled Vegetable Kabobs

Ingredients

  • 3 oranges
  • 8 cloves garlic, minced
  • 3 Tbsp chopped chipotle peppers in adobo sauce 
  • 3 Tbsp chopped fresh thyme (or use 2 Tbsp dried)
  • 1 tsp salt
  • 2½ lb bone-in chicken breasts

Instructions

  1. Grate zest and squeeze juice from oranges into a bowl; add garlic, peppers, thyme, and salt.
  2. Place half of marinade and chicken in a large zip-top bag. Seal bag, and turn to coat; reserve remaining marinade for basting.
  3. Marinate chicken in refrigerator 30 minutes, turning bag once or twice.
  4. Preheat grill to medium-high heat. Grill chicken 20 to 25 minutes, turning and basting occasionally with reserved marinade, until done.
  5. Remove from heat. Let stand 10 minutes before serving.

Side Dish Ingredients

  • 3 red bell peppers, cut into 1-inch pieces
  • 3 zucchini, cut into 1-inch pieces
  • 3 yellow squash, cut into 1-inch pieces
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • 1½ tsp dried oregano
  • ¾ tsp salt
  • 3 cloves garlic, minced

Side Dish Instructions

  1. Preheat grill to medium-high heat. Alternately thread peppers, zucchini, and squash onto 6 (12-inch) skewers.
  2. Whisk together vinegar, oil, oregano, salt, and garlic; brush on kabobs.
  3. Grill kabobs 8 to 10 minutes or until vegetables are tender, turning occasionally.
