Grilled Mojo Chicken Breasts
Grilled Vegetable Kabobs
Ingredients
- 3 oranges
- 8 cloves garlic, minced
- 3 Tbsp chopped chipotle peppers in adobo sauce
- 3 Tbsp chopped fresh thyme (or use 2 Tbsp dried)
- 1 tsp salt
- 2½ lb bone-in chicken breasts
Instructions
- Grate zest and squeeze juice from oranges into a bowl; add garlic, peppers, thyme, and salt.
- Place half of marinade and chicken in a large zip-top bag. Seal bag, and turn to coat; reserve remaining marinade for basting.
- Marinate chicken in refrigerator 30 minutes, turning bag once or twice.
- Preheat grill to medium-high heat. Grill chicken 20 to 25 minutes, turning and basting occasionally with reserved marinade, until done.
- Remove from heat. Let stand 10 minutes before serving.
Side Dish Ingredients
- 3 red bell peppers, cut into 1-inch pieces
- 3 zucchini, cut into 1-inch pieces
- 3 yellow squash, cut into 1-inch pieces
- 3 Tbsp balsamic vinegar
- 2 Tbsp olive oil
- 1½ tsp dried oregano
- ¾ tsp salt
- 3 cloves garlic, minced
Side Dish Instructions
- Preheat grill to medium-high heat. Alternately thread peppers, zucchini, and squash onto 6 (12-inch) skewers.
- Whisk together vinegar, oil, oregano, salt, and garlic; brush on kabobs.
- Grill kabobs 8 to 10 minutes or until vegetables are tender, turning occasionally.
