Ingredients
- 2 (5-oz) frozen salmon fillets, thawed
- 1 Tbsp Old Bay seasoning
- 1 Tbsp olive oil
- ½ lemon
- 1 Tbsp butter, melted
Instructions
- Rub fish with seasoning. Cook in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until fish flakes with a fork.
- Grate ½ tsp zest and squeeze 1 Tbsp juice from lemon. Add zest and juice to melted butter; drizzle over fish.

- 1 (12-oz) pkg frozen riced cauliflower
- 2 oz ground pork sausage
- ½ onion, chopped
- ½ green bell pepper, chopped
- 1 stalk celery, chopped
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 tsp Cajun seasoning (or use Old Bay seasoning)
- 2 green onions, chopped
Side Dish Instructions
- Cook cauliflower according to package directions; drain.
- Cook sausage, onion, bell pepper, celery, and garlic in hot oil in a skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
- Add cauliflower and seasoning; cook 3 minutes or until browned. Stir in green onions.
