Ingredients

  • 2 (5-oz) frozen salmon fillets, thawed
  • 1 Tbsp Old Bay seasoning
  • 1 Tbsp olive oil
  • ½ lemon
  • 1 Tbsp butter, melted

Instructions

  1. Rub fish with seasoning. Cook in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until fish flakes with a fork.
  2. Grate ½ tsp zest and squeeze 1 Tbsp juice from lemon. Add zest and juice to melted butter; drizzle over fish.

  • 1 (12-oz) pkg frozen riced cauliflower
  • 2 oz ground pork sausage
  • ½ onion, chopped
  • ½ green bell pepper, chopped
  • 1 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 tsp Cajun seasoning (or use Old Bay seasoning)
  • 2 green onions, chopped

Side Dish Instructions

  1. Cook cauliflower according to package directions; drain.
  2. Cook sausage, onion, bell pepper, celery, and garlic in hot oil in a skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
  3. Add cauliflower and seasoning; cook 3 minutes or until browned. Stir in green onions.
