French Onion Chicken-Stuffed Sweet Potatoes

Ingredients

  • 6 sweet potatoes
  • 1 (8-oz) pkg sliced mushrooms
  • 1 onion, thinly sliced
  • 1 Tbsp olive oil
  • 1 (10.5-oz) can French onion soup
  • 3 cups shredded rotisserie chicken
  • 6 slices provolone cheese

Instructions

  1. Preheat broiler. Pierce each potato 5 times with a fork. Arrange potatoes in microwave.
  2. Microwave at HIGH 10 minutes or until potatoes are soft, turning potatoes after 5 minutes. Cool and cut potatoes in half lengthwise, cutting to but not through other side.
  3. Meanwhile, cook mushrooms and onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender.
  4. Add soup and chicken to skillet, stirring to blend. Cook 2 to 3 minutes or until thoroughly heated.
  5. Stuff chicken mixture into potatoes; top each with cheese. Broil 1 to 2 minutes or until cheese is melted.

  • 2 lb asparagus, trimmed
  • 2 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Steam asparagus in a steamer basket over simmering water 5 minutes or until crisp-tender.
  2. Remove from steamer basket; toss with oil, garlic powder, salt, and pepper on a platter.
