French Onion Chicken-Stuffed Sweet Potatoes

Ingredients
- 6 sweet potatoes
- 1 (8-oz) pkg sliced mushrooms
- 1 onion, thinly sliced
- 1 Tbsp olive oil
- 1 (10.5-oz) can French onion soup
- 3 cups shredded rotisserie chicken
- 6 slices provolone cheese
Instructions
- Preheat broiler. Pierce each potato 5 times with a fork. Arrange potatoes in microwave.
- Microwave at HIGH 10 minutes or until potatoes are soft, turning potatoes after 5 minutes. Cool and cut potatoes in half lengthwise, cutting to but not through other side.
- Meanwhile, cook mushrooms and onion in hot oil in a large skillet over medium-high heat 5 minutes or until tender.
- Add soup and chicken to skillet, stirring to blend. Cook 2 to 3 minutes or until thoroughly heated.
- Stuff chicken mixture into potatoes; top each with cheese. Broil 1 to 2 minutes or until cheese is melted.

- 2 lb asparagus, trimmed
- 2 Tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Steam asparagus in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Remove from steamer basket; toss with oil, garlic powder, salt, and pepper on a platter.
