Smoky Roasted Sweet Potatoes with Cilantro

Ingredients

  • 2 bone-in pork chops
  • ¼ tsp pepper
  • ½ tsp salt, divided
  • 1 Tbsp avocado oil
  • 1 cup finely chopped pineapple
  • ½ cucumber, finely chopped
  • 1 small jalapeño pepper, minced
  • 2 Tbsp finely chopped red onion
  • ½ Tbsp fresh lime juice
  • ½ Tbsp extra virgin olive oil

Instructions

  1. Sprinkle pork with pepper and ¼ tsp salt. Cook in hot avocado oil in a nonstick skillet over medium-high heat 4 to 5 minutes per side or until done.
  2. Meanwhile, combine pineapple, cucumber, jalapeño, onion, lime juice, olive oil, and ¼ tsp salt. Serve salsa over pork.

  • 1 lb sweet potatoes, peeled and cut into rounds
  • 1 Tbsp avocado oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together potatoes and oil on a rimmed baking sheet; arrange in a single layer.
  2. Stir together paprika, garlic powder, onion powder, and salt; sprinkle over potatoes.
  3. Bake 30 minutes or until potatoes are browned and tender, turning after 15 minutes. Sprinkle with cilantro.
