Blackened Shrimp

Ingredients

  • 1 lb peeled and deveined, large raw shrimp
  • 2 Tbsp blackened seasoning
  • 1½ Tbsp butter
  • 1½ Tbsp olive oil
  • ½ large lemon, cut into 3 wedges

Instructions

  1. Coat shrimp with blackened seasoning; chill 30 minutes.
  2. Melt butter with oil in a nonstick skillet over medium heat; add shrimp. Cook 2 to 3 minutes or until shrimp turn pink. Serve with lemon wedges.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen riced cauliflower
  • 1½ Tbsp butter
  • ½ tsp garlic salt
  • 3 Tbsp sliced almonds
  • ½ (5-oz) pkg arugula
  • ½ cup grape tomatoes, halved
  • ⅓ cup olive-oil vinaigrette

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in butter and garlic salt.
  2. Toast nuts in a dry skillet over medium heat until fragrant. Combine arugula, tomatoes, nuts, and vinaigrette in a bowl; toss.
