Barbecue Beef and Bacon Biscuit Casserole

Ingredients

  • ½ (12-oz) pkg bacon, chopped
  • 1 (6-oz) can refrigerated biscuits
  • ¾ lb ground beef
  • ½ cup barbecue sauce
  • 2 Tbsp yellow mustard
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Separate biscuits, and press into bottom of a lightly greased 9-inch baking dish. Bake biscuits 10 minutes.
  3. Meanwhile, cook beef in same skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in barbecue sauce and mustard; spoon over partially-baked biscuit layer. Sprinkle with bacon and cheese.
  4. Bake 15 to 20 minutes or until hot and bubbly.

Side Dish Ingredients

  • ½ lb green beans, trimmed
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 350°F. Toss together beans and oil on a rimmed baking sheet. Season lightly with salt and pepper.
  2. Bake 20 minutes or until browned and tender.
