Tuna Cakes
Warm White Beans, Spinach, and TomatoesIngredients
- 4 (6-oz) cans wild-caught tuna in water, drained
- 2 large eggs, lightly beaten
- 1 Tbsp lemon juice
- ¾ cup Italian breadcrumbs (preferably whole wheat)
- 1 Tbsp olive-oil mayonnaise
- 2 tsp dried dill
- 3 Tbsp olive oil
- Lemon wedges (optional)
Instructions
- Gently combine tuna, eggs, lemon juice, breadcrumbs, mayonnaise, and dill; shape into 12 (1-inch-thick) patties.
- Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Serve with lemon wedges, if desired.

- 2 (15-oz) cans cannellini beans, drained and rinsed
- 1 (14.5-oz) can diced tomatoes, undrained
- 2 (5-oz) pkg baby spinach
- ¼ cup chopped fresh basil
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook garlic in hot oil in a saucepan over medium heat 1 minute; add beans and tomatoes. Bring to a boil.
- gradually add spinach; cook 3 minutes or until wilted; stir in basil, salt, and pepper.
