Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1½ tsp ginger paste 
  • 1½ tsp brown sugar
  • 1½ tsp curry powder
  • ¼ tsp garlic powder

Instructions

  1. Preheat grill to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together ginger, sugar, curry powder, and garlic powder. Rub mixture over chicken.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; slice. Season with salt and pepper, if desired .

Side Dish Ingredients

  • ½ orange 
  • ¼ cup low-sodium chicken broth
  • 2 Tbsp butter
  • 1 Tbsp brown sugar
  • 1 (10.8-oz) pkg frozen broccoli, carrots, sugar snap peas, and water chestnuts 

Side Dish Instructions

  1. Grate zest and squeeze juice from orange.
  2. Combine orange zest, juice, broth, butter, sugar, and vegetables in a large saucepan over medium-high heat; bring to a boil.
  3. Cover, reduce heat, and simmer 10 minutes or until vegetables are tender.
