Grilled Curry-Ginger Chicken

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1½ tsp ginger paste
- 1½ tsp brown sugar
- 1½ tsp curry powder
- ¼ tsp garlic powder
Instructions
- Preheat grill to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Stir together ginger, sugar, curry powder, and garlic powder. Rub mixture over chicken.
- Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; slice. Season with salt and pepper, if desired .

- ½ orange
- ¼ cup low-sodium chicken broth
- 2 Tbsp butter
- 1 Tbsp brown sugar
- 1 (10.8-oz) pkg frozen broccoli, carrots, sugar snap peas, and water chestnuts
Side Dish Instructions
- Grate zest and squeeze juice from orange.
- Combine orange zest, juice, broth, butter, sugar, and vegetables in a large saucepan over medium-high heat; bring to a boil.
- Cover, reduce heat, and simmer 10 minutes or until vegetables are tender.
