Sheet Pan Lemon-Roasted Fish and Asparagus

Ingredients

  • 1½ Tbsp olive oil
  • 1½ Tbsp butter, melted
  • 1 clove garlic, chopped
  • 1 lemon, thinly sliced
  • 1 lb tilapia fillets
  • ¾ lb asparagus, trimmed
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 400°F. Whisk together oil, butter, and garlic in a small bowl. Arrange lemon slices in a single layer on a foil-lined rimmed baking sheet. Arrange fish and asparagus over lemons; sprinkle with salt and pepper. Drizzle with oil mixture.
  2. Bake 10 to 15 minutes or until fish flakes with a fork and asparagus is crisp-tender. Serve over Easy Cauli-Rice .
