Cheesy Beef and Squash Casserole

Ingredients

  • 2 yellow squash, sliced
  • 1½ tsp olive oil
  • ¾ lb ground beef (or use ground chicken or ground turkey)
  • ½ onion, diced
  • ¼ tsp salt 
  • ¼ tsp pepper
  • ½ (10.5-oz) can cream of mushroom soup
  • ½ cup shredded Cheddar cheese, divided

Instructions

  1. Preheat oven to 350 F°. Sauté squash in hot oil in a large skillet 5 minutes. Remove from skillet.
  2. Add beef, onion, salt, and pepper to skillet. Cook 10 minutes or until beef is browned and crumbly. Drain; stir in soup.
  3. Spoon half of beef mixture into a baking dish coated with cooking spray. Cover with half of sautéed squash and ¼ cup cheese. Repeat with beef mixture and squash.
  4. Cover and bake 30 minutes. Uncover; top with ¼ cup cheese. Bake, uncovered, 5 minutes longer.

Side Dish Ingredients

  • ¾ lb broccoli crowns, cut into spears
  • 1½ tsp olive oil
  • 1 small clove garlic, minced
  • 2 Tbsp water
  • ¼ tsp salt

Side Dish Instructions

  1. Cook broccoli in hot oil in a large skillet over medium-high heat 5 minutes.
  2. Add garlic and water; cover and cook 3 minutes or until crisp-tender. Toss with salt.
