Chicken and Wild Rice Salad
Pita and Hummus
Ingredients
- 2 (8.5-oz) pouches microwavable long grain and wild rice
- 3 cups shredded rotisserie chicken
- 3 mandarin oranges, peeled and sectioned
- 1 cup chopped celery
- ¼ cup chopped fresh parsley
- ½ cup olive oil vinaigrette
- 2 (6-oz) pkg butter lettuce
Instructions
- Heat rice according to package directions, and place in a large bowl. Add chicken, oranges, celery, parsley, and vinaigrette; toss.
- Serve salad over lettuce.
Side Dish Ingredients
- 3 whole wheat pita bread rounds, cut into wedges
- 1 (10-oz) container spinach and artichoke hummus (or use your favorite variety)
Side Dish Instructions
- Serve pita with hummus for dipping.
