Chicken and Wild Rice Salad

Ingredients

  • 2 (8.5-oz) pouches microwavable long grain and wild rice
  • 3 cups shredded rotisserie chicken
  • 3 mandarin oranges, peeled and sectioned
  • 1 cup chopped celery
  • ¼ cup chopped fresh parsley
  • ½ cup olive oil vinaigrette
  • 2 (6-oz) pkg butter lettuce

Instructions

  1. Heat rice according to package directions, and place in a large bowl. Add chicken, oranges, celery, parsley, and vinaigrette; toss.
  2. Serve salad over lettuce.

Side Dish Ingredients

  • 3 whole wheat pita bread rounds, cut into wedges
  • 1 (10-oz) container spinach and artichoke hummus (or use your favorite variety)

Side Dish Instructions

  1. Serve pita with hummus for dipping.
