Tuscan Chicken Gnocchi
Ingredients
- ¾ cup sun-dried tomatoes in oil
- 3 cloves garlic, minced
- 2 (16-oz) pkg gnocchi
- 1½ cups low-sodium vegetable broth
- ¾ cup 2% reduced-fat milk
- 3 cups shredded rotisserie chicken
- 1 (6-oz) pkg baby spinach
- ¾ cup freshly grated Parmesan cheese
Instructions
- Drain 1 Tbsp oil from tomato jar, and heat in a large skillet over medium-high heat. Add sun-dried tomatoes and garlic to skillet; cook 2 to 3 minutes.
- Add gnocchi to skillet, and cook 2 to 3 minutes or until slightly toasted. Reduce heat to medium, and stir in broth and milk. Cover and cook 5 to 7 minutes or until gnocchi is tender.
- Stir in chicken and spinach; cook 3 minutes or until spinach wilts. Sprinkle with cheese.
