Cowboy Casserole
Easy Green Beans
Ingredients
- 1½ lb ground beef
- 1 green bell pepper, chopped
- 3 cloves garlic, chopped
- ½ tsp salt
- ¼ tsp pepper
- 1 (10.5-oz) can cream of chicken soup
- ½ cup half-and-half
- ¼ cup sour cream
- ⅓ cup freshly shredded Parmesan cheese
- 2 russet potatoes, peeled and thinly sliced into rounds
- 2 cups shredded Cheddar cheese, divided
Instructions
- Preheat oven to 350°F. Brown beef, bell pepper, and garlic in a large skillet over medium-high heat; drain and stir in salt and pepper.
- Mix together beef mixture, soup, half-and-half, sour cream, and Parmesan cheese in a bowl.
- Alternately layer sliced potatoes, beef mixture, and Cheddar cheese in a greased 13- x 9-inch baking dish. Cover with greased foil; bake 1 hour.
- Uncover and bake 20 minutes longer or until potatoes are tender.
Side Dish Ingredients
- 1 (12-oz) pkg frozen cut green beans
- 1 Tbsp butter
- ¼ cup crumbled bacon
Side Dish Instructions
- Cook green beans according to package directions. Toss with butter in a bowl. Season with salt to taste, and sprinkle with bacon.
