Ingredients

  • 1½ lb ground beef
  • 1 green bell pepper, chopped
  • 3 cloves garlic, chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 (10.5-oz) can cream of chicken soup
  • ½ cup half-and-half
  • ¼ cup sour cream
  • ⅓ cup freshly shredded Parmesan cheese
  • 2 russet potatoes, peeled and thinly sliced into rounds
  • 2 cups shredded Cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F. Brown beef, bell pepper, and garlic in a large skillet over medium-high heat; drain and stir in salt and pepper.
  2. Mix together beef mixture, soup, half-and-half, sour cream, and Parmesan cheese in a bowl.
  3. Alternately layer sliced potatoes, beef mixture, and Cheddar cheese in a greased 13- x 9-inch baking dish. Cover with greased foil; bake 1 hour.
  4. Uncover and bake 20 minutes longer or until potatoes are tender.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen cut green beans
  • 1 Tbsp butter
  • ¼ cup crumbled bacon

Side Dish Instructions

  1. Cook green beans according to package directions. Toss with butter in a bowl. Season with salt to taste, and sprinkle with bacon.
